At Fruits De Mer, we are committed to sourcing only the most exceptional seafood for all of our wild caught products. Our fish is caught off the coasts of the Mediterranean Sea where it is immediately frozen. It is then transported to our state of the art BRC & IFS approved facility. The BRC Global Standards is a leading brand and consumer protection agency ensuring the highest quality and safety protection in the manufacturing process of seafood. It is here that our seafood is naturally defrosted in cold water. Our Anchovies and Sardines are gutted and filleted by hand to preserve the delicate quality. They are marinated using a centuries old process which we refined for a unique American taste. During this method the fish is soaked for twelve hours in vinegar, cooking the fish without heat, so when they are removed from the marinade they have turned a beautiful white color. As a result, our Anchovies and Sardines bear little resemblance to the canned variety. Our Octopus, Mussels, Mackerel and Trout are first cooked gently, smoked and then marinated to preserve the tender and fresh quality.
